Healthy Homemade Muesli Bars

I’ve tried a number of muesli bar recipes over the years but have never really had much joy. A friend recently shared this one and I thought I’d give it a go.  I’m happy to say that it was so good I made them twice in the one week! Yummy, healthy, chewy and they hold together really well.  Best of all they got the tick of approval from the whole family!  Here are a few flavour variations I’ve come up with, but your imagination’s the limit with a recipe like this! 

Ingredients

PLAIN
1 cup rolled oats
1/2 cup rice bubbles
1/4 cup pepitas
2 tablespoons chia seeds
2 tablespoons shredded coconut
1/3 cup honey
1 1/2 tablespoons olive oil
3 teaspoons water

APRICOT, ALMOND & COCONUT
1 cup rolled oats
1/2 cup rice bubbles
2 tablespoons chia seeds
1/4 cup shredded coconut
1/4 cup slivered almonds 
1 teaspoon sesame seeds
1/4 cup chopped dried apricot
1/3 cup honey
1 1/2 tablespoons olive oil
3 teaspoons water

CHOCOLATE & DATE
1 cup rolled oats
1/2 cup rice bubbles
2 tablespoons chia seeds
2 tablespoons shredded coconut
1 tablespoon cocoa powder
1 teaspoon sesame seeds
1/3 cup chopped dried dates
1/3 cup honey
1 1/2 tablespoons olive oil
3 teaspoons water


 Instructions 

  1. Preheat the oven to 170C.
  2. Lightly spray and line a 20cm x 20cm tin or similar and set aside.
  3. Combine oats, puffed rice, pepitas, chia seeds and coconut. (For the variations add the other dry ingredients here, but NOT the fruit)
  4. Quickly blitz the mixture for a few seconds (optional). This will ensure the mixture holds together better once baked.
  5. In a large bowl add the dry ingredients, honey, oil and water (and chopped fruit for the variations) and mix well. You might need to get your hands into it to make sure it’s well combined.
  6. Press into prepared tin and bake in the oven for approx. 16-18 minutes or until it starts to turn golden on the top. (times may vary between ovens)
  7. Allow to cool COMPLETELY before removing from tin then slice into 10 bars.
  8. Store in an airtight container in the fridge.
